I've made this a couple of times and loved it, but will probably reserve it for fasts in the future, because it's pretty sweet. Also, the recipe couldn't be simpler.

I used:
1 Medium Red Beet
6 Medium Carrots
1 Piece of Ginger, to taste

The beet and carrot flavors blend deliciously and the ginger gives it a little character. But as I mentioned, it is a very sweet juice, so I will probably save it for when I am fasting and need a little energy boost.

Next time I make it, I'd also like to experiment by adding some greens. I would probably add kale, which is about my favorite.

If anyone would like to suggest other additions to this juice, I'd love to hear about them.

I would like to try that with either of the following:

Celery
Kale
Spinach
Romaine
1/4 Lemon or Lime
Sweet Potato

If you want to keep some of the sweetness then I'd go for adding raspberries or strawberries to give it a little bit of zest. I've added this to the list of juices to try. I think this will be a great base for a new recipe.

All very good ideas. I'd be interested in anything you come up with that would cut the sugar density of this juice, because I love the carrot beet combo. I will likely try a few experiments myself.

I like your ideas for additions too. I wonder how maybe half a head of celery would taste with a beet and 3-4 carrots? And maybe some kale and lemon?

I bet that would be a great mix. The celery would definitely tone down the sweetness. It would be an almost salty sweet taste to it. This sounds interesting.

I tried a new variation on the beet/carrot theme. I wanted to make more juice and I wanted it to be a green juice, so I went with:

1 - Beet + tops
3 - Carrots
6 - Large Kale Leaves
6 - Celery Stalks, + greens
2 - Cucumbers
4 - Mint Sprigs
1 - Lemon

I also had radish tops from some radishes I purchased yesterday, so I added those as well, but I don't consider them a necessary part of the recipe.

The juice is a deep earthy red color and the flavor is quite earthy as well. With the cucumber and celery diluting the beet/carrot base, this juice is not nearly as sweet as the original. But, even with no added salt, it has quite a salty flavor. I just looked it up, and beets have more sodium than celery, which really surprised me.

Anyway, I give this recipe a thumbs up!

Wow, I didn't realize beets had more sodium than celery. That surprises me. I'll have to run out and get some mint sprigs to test this out! Did you use a whole lemon?

Oh my gosh! I tried the beet and carrot juice and it is so good! I used 1/2 lg beet
3 carrots
handful of spinach
2 celery
1 cuke
2 sprigs of mint
1/2 lemon with only some peeling left on,all in the juicer . Then I added 1 banana and ice in the blender
